Tambaqui Loin with Kale Crisps
Ingredients:
- 500gr Tambaqui fish Loin
- 3 tablespoons of Grain D'OrŽ Dijon mustard
- 2 tablespoons of organic orange honey
- 300gr of fish stock
- 1 bunch of kale
- Oil, salt and pepper, butter
Preparation:
1) Season the Tambaqui loin with salt and pepper.
2) In a skillet, melt the butter and brown the tenderloins on both sides.
3) Reduce the broth to 2/3 and add the mustard and honey, add salt and pepper.
4) Cut the cabbage and fry it in hot oil, sprinkle a little salt. Assemble the dish
TIP: Serve this dish with a banana farofa.
Truffle Marzipan pie with Almonds
Ingredients:
- 500g of SchuckwerderŽ Marzipan covered with Chocolate
- 225g of melted milk chocolate
- 225g of melted semisweet chocolate
- 225g of sour cream serum
- Liqueur Grand Manier
- Minced Physalis
- 30g of roasted almond pieces
- Whole Physalis for decoration
Preparation:
1) Line a baking sheet in the desired format with marzipan covered with chocolate, knead a little to mix the two ingredients.
2) Take to chill for 40 minutes.
3) Meanwhile prepare the filling: Mix the chocolate with the cream and then add the liqueur and chopped physalis. Fill the pie with this filling and garnish with almonds and whole physalis.
Schneekoppe Diet Chocolate Mousse
Ingredients:
- 80g of Schneekoppe semi-sweet diet chopped chocolate - 12 tablespoons of skimmed milk - 1 tablespoon of colorless gelatin powder - 8 sweetener teaspoons - 4 egg whites Preparation:
1) Take the chocolate to the hrat in water bath with 4 tablespoons of milk to melt.
2) Mix the remaining milk with the gelatin and wait 1 minute.
3) Add the gelatin mixture to the chocolate and stir until well melted.
4) Remove from the water bath, add the sweetener and take to the refrigerator until it begins to harden.
5) Beat the egg whites very firmly and gently stir it with the chocolate.
